AeroFarms Launches U.S. Retail’s First Micro Bok Choy Microgreen, Fusing Culinary Innovation with Sustainable Nutrition

A New Era in Microgreens: AeroFarms Unveils Juicy, Nutrient-Rich Micro Bok Choy Through Sustainable Aeroponics

AeroFarms has launched its innovative Micro Bok Choy microgreen into U.S. retail, marking a pioneering step in the company’s drive to redefine fresh produce for everyday meals.

The product, which made its debut on April 15, 2025, is now available nationwide at prominent retailers such as Whole Foods, Giant Food, and H Mart.

Designed to deliver a unique combination of juiciness and a slightly sweet, mild flavor, the new microgreen promises to enhance a wide variety of dishes while offering a nutrient-dense alternative to conventional greens.

This launch represents the first instance of Micro Bok Choy being introduced to the U.S. retail market, and it underscores AeroFarms’ commitment to innovation and sustainability in the field of microgreens.

The product is part of AeroFarms’ broader FlavorSpectrum portfolio, which includes seven distinctive microgreen varieties.

Each item in the portfolio is aligned with a specific color that signals its flavor profile ranging from cool blue for sweet and mild notes to reds for a bold and zesty impact.

Specifically, Micro Bok Choy has been categorized as “purple,” a designation that conveys its mellow, clean flavor interlaced with delicate sweetness.

This strategic categorization is aimed at helping consumers navigate the diverse flavor options available and make choices that best suit their culinary needs.

Developed at AeroFarms’ state-of-the-art indoor vertical farm in Danville, Virginia, Micro Bok Choy is grown using the company’s patented aeroponics technology.

This innovative growing method uses 90% less water and occupies 230 times less land than traditional farming techniques, allowing for an environmentally friendly cultivation process that significantly reduces resource consumption.

Moreover, AeroFarms’ commitment to health and sustainability is further demonstrated by their pesticide-free approach, ensuring that the microgreens are safe to consume without the need for washing.

These environmentally sound practices not only contribute to the high nutritional quality of the product but also appeal to modern consumers who value transparency and responsible farming practices.

“At AeroFarms, our obsession with flavor fuels our innovation, but nutrition is our true passion. Microgreens contain four to 40 times more nutrients than their mature vegetable counterparts. It’s not only the quantity of calories that you consume that is important, but the quality of calories. Microgreens, including our new Micro Bok Choy, are a nutrient-dense source of essential phytonutrients, vitamins and minerals that can elevate taste and nutrition at every meal.”

Molly Montgomery, CEO for AeroFarms

The versatility of Micro Bok Choy has been one of its standout attributes.

Its fresh, crisp texture and appealing bite-size quality make it an ideal candidate not only as an ingredient in complex dishes but also as a simple substitution for traditional salad greens.

With a flavor profile that can complement an array of culinary applications from sandwiches and stir-fries to smoothies and tacos the microgreen is well suited to meet the demands of contemporary food preparation, which increasingly favors both flavor and health benefits.

This balance between taste and nutrition is a central tenet of AeroFarms’ product development strategy, aiming to provide consumers with produce that is both enjoyable and beneficial for overall well-being.

Consumers can now experience the innovative blend of flavor and sustainability that AeroFarms champions.

The introduction of Micro Bok Choy into the retail space not only expands the company’s FlavorSpectrum but also sets a new benchmark in the microgreens industry by integrating advanced agricultural technologies with high-quality produce.
